The majority of encounters can be bruteforced even with shitty builds.
You need to be completely clueless in RPGs to really brick your progress.
What difficulty would you recommend for my first playthrough? Will I handle hard if I'm a cRPG veteran?

If you are a veteran, that means you have a decent problem solving skill. So yeah, try Hard.
Underrail loves throwing lots of shit at you, but it also gives you many tools to deal with said shit.

Also, my advice would be to not neglect crafting. It's very powerful.
