you should really consider playing a Telvanni character only imo.
playing a mage heavy char is the most interesting way to play Morrowind anyway, plus Rise of the House Telvanni + Uvirith´s Legacy together add HUGE amount of mostly quality content for the House.
can´t comment on Building Up Uvirith´s Legacy, but i´m pretty sure that with these three alone you´re looking at approx 60 hours of content.
anyway, since you seem to be determined to experience a lot of content and don´t seem to be that much concerned with lore, i´d recommend considering adding Morrowind Advanced and Creatures X too - you´re likely
to spend a good chunk of time at high levels and vanilla monster list isn´t really all that exciting for that.
for similar reasons, i´d also recommend
Darknut's Greater Dwemer Ruins Volume 1, which makes the endgame much more challenging while staying relatively lore firendly. here´s [spoilers]

also, i´d stay away from Sabregirl´s Ecology - it fucks up Bloodmoon with retardedly animated deers and is very prone to doubling so you´re likely to end up with 60 deers or guars at one place and such.

incidentally, i just reinstalled Morrowind 10 days ago and was rather satisfied with my basic retex setup. installation went roughly like this, in this order:

Bloodmoon Texture Fix
correct UV rocks
this "prepares" the game for addition of sharper textures

Morrowind Visual Pack - Combined
Jarrod's Bloodmoon texture pack
a base that puts most of textures "in line"

all of Connary´s textures. for most of architecture and landscapes hist textures are simply the best and very purist-y.
he put all of his uploads down to "make place" for his all-encompassing Compendium, but that´s likely to be released in 2015, so until then, here´s this link:

for weapons, armor and creatures, Darknut´s are by far the best, but he has some issues with packaging, so i´d recommend checking out
BTB's Morrowind Mod List which properly describes how to install them issue-free.
checking out
mods made by vurt shouldn´t hurt too, he probably takes his artistic license too far to stay purist friendly, but personally i really like his work.
