Play Arcanum if you really liked the Fallout games. It has many similarities, so you'll probably love it.

Then play Bloodlines, it's quite a bit different and the athmosphere is stunning. Really nice dialogues.

And then... Planescape Torment. The best game I've ever played. It's wonderful. Great story, great characters, great athmosphere, great *everything*.

The Gothics are rather good too, really fun games with alternate paths to victory [depending on which faction you choose] and a great combat system that most people found horrible. I liked it, though. It takes time to getting used to, but then it's awesome. And the city is great.
