I'm a surprisingly decent mileage out of Ghost Recon Future Soldier - the game itself is lacking (shame, really, from what I hear, it used to be a decent series but they decided to take the CoD route, though not as obnoxious) but the gun customization is good and they all feel satisfying to shoot. Unfortunately, no levelups here.
Then there's Far Cry 3 which gives you a nice open playground to go negro hunting in a variety of scenarios, you get to spend some skillpoints and the boomsticks are customizable, but they feel a bit samey to shoot.

Rainbow Six Vegas 1 & 2 are pretty satisfying in the gun department, as well. Nice variety of real weapons each of which allow limited, but useful customization--usually just the type of scope you can mount, but I think some of the weapons allow you to add bigger clips or recoil control devices. And pretty much every assault rifle/submachine gun has variable fire rates and can be silenced.
They did quite well in the sound department, too--turn up your surround system and enjoy the thunderous reports of a H&K G3 at full auto.
I totally forgot about Rainbow Six, though I heard mixed stuff about the recent installments.
I also managed to forget Hitman Blood Money. It features quite a few collectible guns, and the main tools of the trade are quite customizable - which changes the handling quite a bit.
Of course, it's not a shooter oriented game, as evident in the controls, among other things, but its good fun to just crash the party with a machine gun, punisher style.

Battlefield 4 has some nice gunporn and customisation, too bad you singled out multiplayer games.
I like the way my guy pulls the, eh, grip? back when reloading the AK-12. It looks pretty cool I think.

Not sure I would play Metal Gear Solid 4. Too much sneaking.
The actual shooting is an underrated aspect of MGS4; as far as popamole shooting goes I think its one of the best, in part due to the crazy amount of options you have - apart from the sheer amount of weapons there is stuff like being knocked on your back by enemies, and being able to then shoot while lying on your back.
