Hell man, you've got 2 months of material right there. Since you are doing this open-world-ish players will spend a lot of time chatting, drinking, having fun, plotting, etc
I also allow my players to do some little worldbuilding if it makes sense. If they are in big city, we can assume there is a tavern nearby, or a bard playing a song, if it fits their idea what they want to roleplay right now.
I give them a lot leeway, I only become a murderdm in combat.

Oh by the way, try to trim the trash combat, its not fun, takes a lot of time and is pointless. Use it only when you need a time to think whats happening next :P
