You are going for extremes here,a game doesn't need to be completely realistic or completely retarded.For TW specifically,Geralt doesn't have to do all his retarded moves but use more simple stuff with his incredible speed, then the result would be this:
Geralt has a sword and starts a fight. Geralt parries spear closes the distance kills dude.
Geralt has a sword and starts a fight.Parries incoming blows and strikes in the gaps in the dudes armor,kills dude.
Parrying spear is only in movies where some dumb character don't use spear properly. If you take spear (or even long stick) yourself you will see how fucking fast you can retract spear and make another thrust even if someone parry it.
There is a reason but it's not the reason you are trying to imply .Spears were battlefield weapons used in formation while rapiers were dueling weapons that were rarely carried in wars,the last swords that saw action in war were probably sabres.
Spears were battlefield weapons because they were unpractical to go to bar with it or to shop, not because you could fight in formation.
Experienced spear wielder vs experienced swordsman would 95% end up being death of swordsman in 1on1 simply because reach and speed of weapon. If you don't believe me look for Youtube and people who old research that stuff.
Spear has amazing ability to retract itself in split second and what is most important is has very narrow point of thrust making it difficult to even see thrust standing front to spearwielder.
So bullshit like "closing distance" never was true about fighing with spear wielders.
What you were talking about were pikemen. Units specially created to combat cavalry with spears being insanely long. And those spears were called pikes (thus pikemen) because they were as i mentioned very very long spears not fit for infantry combat.
As of rapiers. Point was that rapiers were swords who completely removed slashing ability for thrusting because thrusting is much faster and super deadly opposed to slashing. And no rapiers were used on battlefield same as swords earlier. As sideweapon but mostly for ground units as rapiers were completely useless for cavalery which used as sidearm Sabre mentioned by you along with military picks and blunt weapons.

Which sword what ? All longswords were mostly created with straight looong blade to give attacker reach needed to stab people. Slashing people with heavy sword such as longsword especially against someone who have shield and shorter lighter sword was death wish. Ton of moves with Longswords included actual grappling and moving your hand to blade giving you more leverage and using its reach to stab people with its pointy end.
That is completely beside fact that if you have looong blade it can easily break when you try to slash someone.
There are slashing swords like gladius or viking type sword but all of those have short blade fit for combat with shield.
Just look here how people who know their stuff (as they actively research old fighting tech) use longswords:
They always start fight and fight mostly with stabing. Because that is purpose of longsword and its reach.
