PLay Planescape:Torment. Be sure to install the fanmade buxfix patches, the high resolution mod, and tweak it so that the font is a bot larger.

If you want more games that are kinda like Arcanum and Fallout, you could try:

Ultima VII The Complete Edition
Geneforge 1-5
. 5 is the best one if you want less shitty graphics and everything but personally I'd recommenced you to start with the first one and don't marathon them.
Quest for Glory 1-5 - this one is okay to marathon in my opinion. Also get Quest for Infamy if you want something similar afterwards.
Be sure to play Deus Ex if you haven't already. And Planescape Torment .

Get Thief Gold and play it fgt. Why would you have Thief 2 but not the first one?
Same with Jagged Alliance 2, get the original and play it if you haven't already.

Okay, two more random recommendations:
Bad Mojo Redux
Mark of the Ninja

Fron the top of my head, games that I would buy that aren't obvious classics:
Independence War (+expansion) and Independence War 2: Edge of Chaos
Primordia, Resonance and Gemini Rue (especially Primordia)
Crusader: No Remorse nad No Regret
Nexus: The Jupiter Incident
Bioforge (If you liked Alone in The Dark and don't mind clunky controls/shitty combat)

Another World
Raptor: Call of the Shadows

Those are two games I actually played and finished, after buying them from GOG. Which is quite an accomplishment, considering that I have finished few of my huge GOG library. But they were great fun and did not let me go, until I had finished them.

Anvil of Dawn. Mediocre gameplay, but a motherfucking masterclass in world design and atmosphere.

Since I'm cheap I bought most of my GOG games during sales.
Some of the better ones not already mentioned are:
Betrayal at Krondor
Gabriel Knight 1+2
Farcry
King's Bounty: Crossworlds
Lands of Lore 1+2
Lords of the Realm Royal Edition (includes 2 + siege pack)
Silent Storm
Space Quest 4-6 (6 is shit though)
Simon the Sorcerer 2
Wizardry 6-8
Zeus
