Well the SoulsBorne series already takes so much from Beserk (one of the reasons From's setting in Demon/Dark Souls 1 were so good).

But the idea of having Kentaro Miura working with From on a game...

Not sure what Miura could contribute tbh. Concept art? From already has concept artists working there, and they have a better grasp at what they are capable of adapting into 3D. Story? Miura isn't a particularly interesting writer either. Berserk has a functional story, but you don't need the man to write what he did. At best they could slap a "Featuring Kentaro Miura from the Berserk Series" tag on the box to make all the Berserkfags lose their shit. Not that that would do much to boost sales since most Berserkfags already are fans of Souls. He could give From the license to make a Berserk RPG, but again, they probably wont need Miura's help to make one.

After a bunch of these Souls games, I wouldn't mind playing as a predefined character like Guts, with a traditional narrative structure. There have been some Berserk games that were alright, but nothing on the level of Souls or Bloodborne imo.

Berserk would probably be more like an action game than an RPG, like Doom (2016) where you collect upgrades to your weapons kit. I can't really envision Guts using magic or anything that deviates from his manga arsenal.
