These two Legend of Zelda ones are pretty great. I played through the Goddess of Wisdom while my brother played Parallel Worlds and we raced to see who could finish first. I think Parallel Worlds is more challenging, though it wasn't the one I played. I only got to listen to my brother whine the whole way through.
There are two great complete Super Mario 64 hacks for those who are into that sort of thing:

Super Mario Star Road
Super Mario 74 is far more difficult than the other one. Some of the convoluted jumping bits will make you lose your mind. But in a good way.

Looks like Dark Souls.
Dark Souls is casual easymode compared to this. Those hidden blocks were hilariously mean, but when the coins appeared at the end, that was fucking brutal.
