So far replaying the same class isnt worth it, Praetor vs Merchant vs Loremaster were underwhelmingly different. But one playthrough with a Merchant/Lore character, one with a sneaker, and one with a combat/soldier each play wildly different and give different enough quests and resolutions to actually feel worth playing it again.

That said ive only done non-combat and sneakers, waiting for the next update to run through with a combatfag.

Waiting for new game+ to actually play the game.

It's a relatively short game but it's packed with replayability. Even on the Assassin path you have at least two or three opportunities to backstab and switch sides. I don't remember the non-combat builds having a ton of options in terms of jumping about in the storyline.

You can change sides with every background, including non-combat characters. The best wayto measure your understanding of the reactivity you are missing is paying attention to the achievements.

Moreover, you need to consider that if you don't try new skills, you are missing many hidden choices. Most skill checks have skill requirements, for instance, if you don't invest in etiquette, you don't see the opportunities to use etiquette.
