Actually, Unlimited saga has a lot in common with Realms of Arkania, there's a reason why these are two of my favourites video games :
- many non-combat skills and skill usage
- interesting character development, big parties
(- a complicated system, not that easy to get into, flexible class system)
- dungeons with many atmospheric texts and unique mechanisms
- that kind of summaries the points above but an overall p&p feel.

Starting easy Planescape Torment

This is indeed easy. Final Fantasy 7, of course. Some of the long-ass overly creative spell animation in FF7 were a direct influence to Torment. So you can thank FF7 and it's success for having to watch a dragon circle the fucking milky way before hitting it's target in Torment.
